Nick began his career cooking in a number of country house hotels, before moving to London to work for the three Michelin starred chef Nico Ladenis, at both Incognico and Chez Nico.
In 2004, an invitation to spend a day in the kitchen at Gordon Ramsay at Claridges proved pivotal: he remained there for three years, before moving to Petrus, which was then overseen by Marcus Wareing.
After that, he was asked to relocate to France, to form part of the opening team for Gordon Ramsay au Trianon in Versaille. Success ensued and the restaurant was awarded two Michelin stars within its first year of opening.
Nick moved to Dubai in 2010, to help Scott relaunch Verre at the Hilton Dubai Creek. With Nick and Scott at the helm, the restaurant was soon recognised as being one of the best in the region.
Eighteen months after arriving in the UAE, the two friends were given the chance to make their own unique mark on Dubai’s dining scene with table 9.
Nick is now a partner in their newly formed company and is looking forward to the future
Scott knew from an early age that his life was meant to be spent in the kitchen, starting out as an 11-year old washing dishes in his town’s local hotel and going on to attend catering college at the age of 16. Scott reached the national finals of the Gordon Ramsay annual chef’s scholarship in 2003, and was then asked to join the team at Gordon Ramsay at Claridges.
The fast paced, demanding environment of this Michelin starred kitchen suited him; he remained with Gordon Ramsay in London until 2010 when Gordon asked him to help re-launch Verre by Gordon Ramsay at the Hilton Dubai Creek. As Gordon’s tenure at the hotel came to an end in late 2011, Scott and long time friend Chef Nick Alvis saw it as an opportunity to open their own restaurant a reality. With the backing of Hilton Hotels, table 9 by Nick and Scott opened to great acclaim on November 9th 2011.
Scott is a well known and respected chef in Dubai appearing regularly on speaker’s panels and forums, in magazines, on prime time TV and even in local commercials. During December 2012 both Scott and Nick collaborated with Spinneys grocery stores for a nationwide Christmas campaign featuring their favourite holiday recipes and advice on how to plan and prepare for the perfect Christmas lunch.
Scott was voted What’s On Magazine’s Chef of the Year in 2010 and Caterer Middle East’s Chef of the Year in 2011, he is also a regular judge on the panel for TimeOut Dubai’s Young Chef of the Year Competition.
Scott and Nick then joined the Albawardy Investment Group’s F&B concept development team to launch Taste Kitchen, a chain of award-winning-winning contemporary, casual restaurants.
In 2016 they formed an exciting long-term partnership with Gates Hospitality and are thrilled to announce that their first venture together, folly by nick & scott, will be opening in Q4 of this year.
